This is a very easy recipe for a very versatile sauce. Play around with the ingredients to adjust the flavor to your liking. Add it to macaroni like I did, or add some southwest seasoning and make it a nacho cheese!

Ingredients

  • One head of cauliflower cut in pieces
  • 1 cup of peeled and diced potato (Red potato gives this a nice texture)*
  • 1/3 cup nutritional yeast
  • 1 teaspoon each of onion powder and garlic powder
  • 1 heaping tablespoon red palm oil (Suggested brand)*
  • 2 teaspoons of lemon juice or vinegar (More if needed)
  • Salt to taste
  • Tumeric for additional coloring

Steam the cauliflower and potato together with salt until very tender. Test with a fork.

Drain and transfer to blender or food processor. Add remaining ingredients and blend until smooth.

Add additional salt or lemon juice to make the flavor more tangy if desired.

Add in pasta and enjoy your mac and cheese!

*Modifications*

*Potato is optional and can be omitted for a lower carb option.

*Palm oil is optional and adds to the creamy texture and cheesy flavor. It can be substituted with vegan butter.

*A half cup of soaked, raw cashews can be added to up the protein and amp up the nutty flavor.
